Chasse is a big part of the local tradition here in Bagnes and beautifully cooking it, is an important part of the respect of killing for food.  So with years of experience running a specialised game cookery school in the UK, it really is the best place to learn how to cook this very special local cuisine.

Students work in pairs and some recipes will be made together as a whole group. We will sit down afterwards and enjoy eating the fruits of our labour with a glass wine. 

Typical recipes covered 

  • Game pie
  • Wild boar ragu with fresh tagliatelle
  • Venison pave & pomme puree with local mushroom sauce
  • Rabbit & rosemary confit

Skills include

  • Learn about the different cuts of meat and how best to use them
  • Different ways to slow-cook meat until meltingly tender
  • Perfectly cooking a venison steak
  • Accompianments to show game meats off to their best

Prices for 4h30 (4-5 recipes can be made in this time)

  • Private lesson for up to 4 people - 1150 chf 
  • Private lesson for up to 8 people - 1500 chf 
  • Group mixed lesson - 195 chf pp (min 6 people to run, max 8)**

** please note that if you want to do a shared class, we will agree a date with you 3 weeks or more in advance, and advertise it to our clients and contacts. We also suggest you ask your friends if they would like to join, so that we can get the minimum number required.

NB: price includes sitting down to enjoy the fruits of our labour in our beautiful dining room.
